Ingredients

Mochi dough

  • Rice flour 150g
  • Sugar 120g
  • Water 200g
  • Hydro soluble food coloring QS

Mochi dough

Mix flour and sugar and incorporate slowly the water while mixing until obtaining a smooth dough.

Place in a bowl with a plastic wrap on top and cook it in a microwave for 4min at 600 watts. Mix with a spatula (don’t worry if it is sticky, it is normal) and put again in the micro-wave for 3min.

On a table, throw some starch and put the dough on top of it to avoid a sticky effect. Put some starch on your hands and make balls the size you need. Of course you can garnish the balls with cream, fruits, berries….

When balls are done place them in the fridge for about 2-3 hours before degustation (the best is to keep them overnight before degustation).
