A French Puff Pastry Competition in Hong Kong
Held in the vibrant city of Hong Kong, this year’s Candia Professional Pastry Trophy competition embodied the essence of French patisserie while spotlighting the talents of local chefs. Co-organized by our official distributor, Food Gears, this sensational event spanned across two engaging days, July 24th and 25th at the Pots n Pans Cooking Studio.
Talented professional chefs came together to showcase their expertise, utilizing specified ingredients from the esteemed range of Candia Professional Products. Key ingredients included Candia Professional Extra Puff Pastry Butter, Candia Professional Signature Whipping Cream, and Candia Professional Cooking Cream 18%. The challenge? To perfect two classic French pastries: the vol-au-vent and the palmier. These iconic pastries required precision, creativity, and understanding puff pastry techniques.
The results were determined by following five crucial criteria:
- Mise en place and orderly working area
- Portion control of the ingredient
- Creativity and overall impression
- Taste & Technique
- Technique and skill in using Candia Professional Products
Adding to the event’s prestige was our esteemed head judge, Chef Wei Loon Tan. Chef Tan, a double winner of the Asia Pastry Cup and a true icon in the region, brought his extensive experience and keen eye to the competition, ensuring the highest standards were met and that each pastry was judged fairly.
After rounds of meticulous judging and a thrilling display of pastry artistry, congratulations are in order for Chef Mr. Tsui Kam Ping of Ly Bakery, who emerged victorious. With his exceptional skill and inventive approach, Chef Tsui earned the well-deserved title of “Master of Puff Pastry.” We also extend our congratulations to Chef Ms. Chan Lok Yan from Hotel ICON, who secured 2nd place, and Chef Mr. Ho Ka Mun from New World Millennium Hong Kong Hotel, who came in 3rd place. Their remarkable performances showcased their talent and dedication to the craft.
